1/2 cup butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Make sure that the butter is at room temperature, or put the butter in the microwave for about 15 seconds just to soften it up.
  • Using a mixer, cream the butter, brown sugar and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract and mix until combined.
  • In a separate bowl, sift the flour, cocoa powder, baking soda and salt.
  • Add the dry ingredients into the wet ingredients and mix until everything is incorporated and you're left with a luscious chocolate dough.
  • Make truffle-sized balls and place them on a parchment lined baking sheet.
  • Bake for exactly 8 minutes--no longer--no less.
  • Let them cool.

3 cups oatmeal (quick oats)
2 tbsp cocoa powder
2 whole bananas (ripe)
1 cup water

Steps:

  • In a large mixing bowl Combine oatmeal and cocoa powder and whisk
  • Add water to mixture and whisk again
  • Allow to set for 1 hour in order for the oats to absorb the liquid
  • Toss in the bananas and manually mush and knead into a ball
  • Preheat oven to 350 degrees F
  • Line a baking pan with parchment paper 
  • Divide oatmeal cookie dough into 12 balls of equal size
  • Place cookie dough balls out on baking pan
  • Use a fork to flatten the tops of each cookie
  • Bake for 10-12 minutes
