Here's the first Mrs. Fields chocolate chip cookie copycat recipe I created for the Top Secret Recipes books back in 1987. Inspired by a bogus chain-letter cookie recipe, this is my version of the delicious Mrs. Fields cookies that are crispy around the edge and chewy in the middle. Be careful not to cook these too long. I know it becomes tempting to keep cooking these—they don't seem to be done after 10 minutes—but they will continue to cook for awhile after you take them out of the oven, and when cool, will be chewy in the middle. Ingredients

2 1/4 cups Gluten-Free Flour Blend (see below)
1 teaspoon gluten-free baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon xanthan gum
3/4 cup Land O Lakes® Butter softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 large Land O Lakes® Eggs
2 teaspoons gluten-free vanilla extract
1 (12-ounce) package (2 cups) gluten-free semi-sweet chocolate chunks or chips

Steps:

Heat oven to 375°F.
Combine flour blend, baking powder, baking soda, salt and xanthan gum in bowl. Set aside.
Combine butter, brown sugar and sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed. Gradually add flour mixture, beating at low speed until well mixed. Stir in chocolate chips.
Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake 9-12 minutes or until light golden brown. (Do not overbake.) Let stand 1-2 minutes on cookie sheets; remove to cooling rack.

Use a food processor to crush cookies into fine crumbs. Add all but 2 tablespoons crushed cookies to a medium bowl. Add cream cheese and and salt and stir until evenly combined. Line a baking sheet with parchment paper. Using a small cookie scoop, form mixture into small balls and transfer to prepared baking sheet. Freeze until slightly hardened, about 30 minutes. Dip frozen balls in melted chocolate until coated and return to baking sheet. Sprinkle with remaining cookie crumbs. Freeze until chocolate hardens, about 15 minutes.

Top with remaining 1/4 cup chocolate chips and sprinkle with flaky sea salt. Bake until edges are golden, 20 to 24 minutes. Serve warm with ice cream, warm caramel sauce, and chocolate syrup, if desired.
