1 18.25 oz box yellow sugar free Pillsbury cake mix
1 21 oz can Comstock sugar free apple pie filling
4 Eggs
Cinnamon (optional)

Steps:

  • Preheat oven to 350°F. Grease mini muffin tin with I Can’t Believe It’s Not Butter Spray.
  • Add cake mix, apple pie filling and eggs to a large mixing bowl.
  • Using a hand or stand mixer, thoroughly combine all the ingredients until apple pieces are broken up. [You can also use a food processor to break up the apple pieces prior to adding to the mixing bowl.
  • Pour mixture into muffin tins, about 3/4 of the way.
  • Bake 20-30 minutes or until a toothpick comes out clean.
  • Allow to cool. Sprinkle cinnamon over the top (optional)

2 cups all-purpose flour
2 teaspoons baking powder
¼ cup white sugar
½ teaspoon ground cinnamon
½ teaspoon salt
1 cup milk
1 egg, beaten
¼ cup butter, melted
1 cup apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
