The Queen of southern pies! You can use sugar free liquid flavoring if sugar is an issue for you. This recipe came to me from my girl pal, Becky.

Number Of Ingredients 6

3 eggs
1 cup sugar
1 cup corn syrup (light)
1/2 cup butter (melted)
2 cups pecans (chopped)
1 teaspoon vanilla

Steps:

  • Mix in order the above ingredients.
  • Pour into two 9” unbaked pies shells.
  • Bake at 350 degrees for 10 minutes.
  • Then bake at 300 degrees for 50 minutes.

"Old southern style recipe,Not for the person who's watching there calories. This pie is sweet,rich and and has a custard style texture. Exellent served hot or cold !!! This pie is one of my all time favorites. This recipe is simple to make and your guest's will LOVE IT !!!!"

7 lrg Eggs
1 teaspoon Salt
1 1/2 teaspoons Pure vanilla extract
-- ADD --
3 1/2 cups White Sugar Blend
3/4 cup Flour Blend
1 cup Buttermilk Blend
2/3 cup Melted Margarine Not too hot/Blend
2 Deep Dish Pie Shells

Steps:

  • "Mix all ingredients well and pour into 2 (two) unbaked pie shells.Bake for 45 minutes to 1 hour at 325? degree oven. If a puddle of butter forms in the middle of the pie, pour off and return to the oven. Test with tooth pick to make sure pie is done. (tooth pick will come out clean when pie is done. Serve warm or cold,garnish with whipped cream and or a lemon wedge"

  • In a bowl, combine flour and salt. Cut in shortening and butter until crumbly. Add water, tossing with a fork until a ball forms. Roll out pastry to fit an 18-oz. baking dish. Press onto the bottom and up the sides of the dish. , Combine filling ingredients; mix well. Pour into pastry shell. Bake at 375° for 35-40 minutes or until a knife inserted in the center comes out clean.

Based on Debby Maugans Nakos's Southern Pecan Pie in her Small-Batch Baking book. She gave directions for making a spiked whipped cream, but this pie is so rich and wonderful as it is, I can't imagine it needing a topping. The pecan halves can be found easily and inexpensively in the baking section of your grocery store in 1/2 cup bags. I'm giving the author's option of using bourbon in the pie, but I did not use it myself. Debby recommends Southern Comfort for the pie, but if you use another bourbon, she suggests you might want to add another tablespoon of sugar.   • Two-Crust Pastry: In medium bowl, mix flour and salt. Cut in shortening, using pastry blender or fork, until mixture forms coarse crumbs the size of small peas. Fold into fourths and place over filling, or roll loosely around rolling pin and place over filling. Unfold or unroll pastry over filling. Cut slits in pastry so steam can escape. Trim overhanging edge of top pastry 1 inch from rim of plate. Fold edge of top crust under bottom crust, forming a stand-up rim of pastry that is even thickness on edge of pie plate, pressing on rim to seal; flute edges (see Decorative Crust Ideas, page 00). Bake as directed in pie recipe.
