APPLE BACON MEATLOAF | JUST A PINCH RECIPES
The bacon and apples really add a wonderful, surprising twist to this already moist meatloaf.

Steps:
- Preheat oven to 350 degrees. Grease 2 loaf pans. Line the bottom of each loaf pan with bread slices. (This will soak up any grease from the cooking meatloaf.) Set aside.
- Combine meats, eggs, bread crumbs, onion, apple, chopped bacon, apple butter, apple sauce, and barbecue sauce using your hands to mix thoroughly. Salt and pepper to your liking. Mix thoroughly. Separate and put into loaf pans.
- Mix the rest of the apple butter and barbecue sauce to make glaze. Spread over top of meatloaf mixture.
- Place 3 slices of uncooked bacon on each loaf.
- Bake at 350 degrees for 45 minutes to an hour until cooked through. Switch oven to broil setting. Broil for 10 minutes or until bacon on top is crisp. Let meatloaf rest before moving to serving plate. (Remember, the bread is not for eating. It is soaked with grease. Just discard.)

The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

- Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
- Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
- Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
- Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60–75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
- Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.

- Preheat the oven to 350 degrees.Place the ground beef, milk-soaked bread, Parmesan, eggs, parsley, Italian seasoning, salt, and pepper into a large bowl and smush/knead it around with your hands until everything is completely mixed.Meanwhile, make the sauce: In a separate bowl, combine the diced tomatoes, brown sugar, mustard, cayenne, and Worcestershire and stir it together. Place the meat mixture on a drip pan (a pan with a slotted tray on top) and form it into a big honkin’ loaf shape. Arrange the pancetta slices in an overlapping pattern all over the surface then spoon the tomato mixture all over the top. (Leave any excess juices in the bowl.)Tent the pan with foil and bake it for 40 minutes. Remove the foil and continue baking it for another 30 to 40 minutes, until the internal temperature reaches 160 degrees and the meatloaf is no longer pink in the middle. Cut it into thick slice and serve it with your favorite sides.
