Banana Cupcakes Recipe: How to Make It image

This recipe was given to me by my mother, and I've since handed it down to my daughters. The moist cupcakes are topped with frosting that comes together in no time. And if you'd like even more banana taste, stir some mashed banana into it. —Wanda Thole, Leonard, Minnesota

Number Of Ingredients 15

1/2 cup shortening
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2 medium)
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup buttermilk
FROSTING:
1/2 cup butter, softened
2-1/2 cups confectioners' sugar
3 to 4 tablespoons milk
Colored sprinkles, optional

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and bananas. Combine the flour, baking powder, baking soda and salt; add to banana mixture alternately with buttermilk, beating well after each addition., Fill 18 paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove to wire racks to cool completely. , In a small bowl, cream butter and confectioners' sugar until light and fluffy; add enough milk to achieve desired spreading consistency. Frost cupcakes. Garnish with sprinkles if desired.

I had one ripe banana, and didn't want to toss it or freeze the mash. So I made them into muffins. ^W^

Total Time 30 minutes

Prep Time 10 minutes

Cook Time 20 minutes

Yield 9-10 muffins

Number Of Ingredients 10

1/4 cup butter
1 banana
1/4 cup sugar
1/3 cup brown sugar
1 tablespoon milk
1 egg
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup flour

Steps:

  • Preheat oven to 350°. Prep. muffin tin, with butter/spray or liners.
  • Melt Butter in Microwave for 30 seconds. Meanwhile, in a meduim mixing bowl, mash your banana.
  • Then in the same bowl add; sugar, brown sugar,milk, melted butter, egg. Then cream together.
  • Once creamed, add Baking Soda, Salt, and flour. Mix well.
  • Then fill the muffin tins 3/4 up, and place in the middle of the rack.
  • Let them bake for 17 minutes, or until middle comes out clean with a knife.
